I've visited a few of these places and the drivers like Outrun 2, Daytona and light gun games Time Crisis 1 & 2 are always the biggest draw.
It's a double edged sword really, NQ64 might do well because they can run a bar - but it's not a nice atmosphere to play games in. I went to the one in Soho a couple of weeks ago and it went like this:
Me: Shall we play Outrun 2?
Friend: WHAT?
Me: Shall we play Outrun 2?
Friend: WHAT?
