Games where there was an end/completion were sort of after the time I was going in Arcades....and if there was I mostly avoided them in my quest for value for money....but...

Complete:
Pacman....though way off perfect (-200k) :-(

Off the top of my head - Double Dragon, Outrun, Neo Drift Out, DoDonPachi, DoDonPachi Dai Ou Jou, Shock Troopers 1&2, Mark of the Wolves, NBA Jam (& TE), Waku Waku 7, I suppose T&F and Hypersports.

I've come so close on R-Type and Pulstar - one day.......

I've finished the wizard modes on TAF, STTNG, MM & TOM if they count? :)

Double Dragon, Street Fighter, Killer instinct, Tekken and other fighters... I think everyone can do the fighters.

Others that don't count but I did do it in 1 play through without continue and that was SNES Aladdin (Love that game even today) All Donkey Kong countries but those I played over the course of a few days, but all in one no continues.

Most games back in the day had no real ending but I used to get to the kill screen on the speeded up version of Crazy Kong, often on my first life. (Speeded up version = kill screen at level 12)

I used to be able to complete Rygar on one life also.

Mousetrap I could play all day.

Amidar (Konami version) I can still play all day, or until I fall asleep...

Rygar on 1 life is impressive!
Love the game, probably in my top 3 faves ever, but damn it's easy to die later on!
(maybe if I didn't get tempted to muck around I'd do better, going for a ride on the swoopy gremlin/bird things is such fun)

When you kill the end boss and have collected all the diamonds you get a final treasure room - you hop in and grab the rod for the ending - job done. Unless you're distracted and forget to do that in which case the waters rise and

i can do Jump-Bug (rockola) over and over - everytime... and of course Phoenix but i guess that doesnt count as its a shooter-em-up with only 5 levels ;)

has anyone completed R-Type ? how many levels are there ?
