I am not sure you can sub GAL for prom?
Usually people are asking for PAL to GAL conversion.
Is there a reason you cant use Prom files and get replacement proms burned instead?
The arcade rom patcher (for wboysys2) generates 3 JED files that can be used for GAL16V8 instead of PROMs (for color PROMs). There are instruction on the patch info on what pins should be left out of socket.

Well I know it works correctly as I have a converted board. Did you read the instructions fully?
Did you makeup the MCU bypass board as per JPG and put this in IC74?
Did you program a GAL and put it into IC10?
The colour GALS are important but wouldn't stop the game running.
Hi. Where can I find instructions about how to make the bypass board? I have a protected Choplifter set with INTEL C8751H

Almost forgot. Someboy has the 3 JEDEC files for using 3x GAL16V8 instead 3x 82s129 on Wonder Boy II? This game is not listed in the program, but there exists the unprotected version of the virtual console.

EDIT: self answered. The info inside the 3 PROMs of Wonder Boy II is too big for being replaced with GAL16V8. That's why the app creates 3 replacement PROMs for GAL16V8 on Wonder Boy 1, because this game has very tiny color info inside

Says M82-A-A MADE IN JAPAN

A lot of the ICs have had the info sanded away, too.

Maybe it's not a boot? I haven't done one of these for donkey's years...

My Irem PCBs have had components sanded. It's likely the real deal. The R-Type conversion in Arcade ROM Patcher should work. I haven't done an Major Title, but I did do two M84 Pound for Pound conversions to R-Type and R-Type II.

I have done the R Type mod and the game works well, but there are very slight graphical glitches. I didn't pay attention to the original golf game when I first tested it to be honest, so didn't notice any glitches then. Could this be a RAM failure?

It could be ram but could also be the customs. Depends on what kind of glitches and if they are sprite or tile glitches. It is always best to be sure a board works perfectly before converting it, but I can confirm that my Rtype conversions do not cause any graphical glitches.
Except that the second level spaceship does get incorrect gfx as you shoot and destroy it, I have a fix for this and it will get updated in the next release of my patcher.
